Fairy Cupcakes
Your kids will love this sweet treat. Cute and colourful, fairy cupcakes are the go-to children's party classic and such an easy recipe to make. The little lovely decorations on the top add a pop of fun and colour. The best part? Your kids can express their creativity and imagination as you decorate the cupcakes together!
Ingredients
- 100 g softened butter
- 100 g caster sugar
- 2 large eggs
- 100 g self-raising flour
- 1 level teaspoon baking powder
- 225 g sifted icing sugar
- 2-3 tablespoon warm water
- A handful of sweets, to decorate

Recipe
- Heat the oven to about 200 degree celsius. Place fairy cupcake cases into a 12-hole bun tin, to keep its shape as they bake.
- Measure all the ingredients into a large bowl and beat for 2-3 mins until the mixture is well blended and smooth. Fill each paper case with the mixture.
- Bake in the preheated oven for 15-20 minutes until the cupcakes are well risen and golden brown. Lift the paper cases out of the bun tin and cool the cupcakes on a wire rack.
- Put the icing sugar in a bowl and gradually blend in the warm water until you have a fairly stiff icing. Spoon over the top of the cupcakes and decorate with sweets.

Ingredients
CRUST
- 2 cups (200g) digestive cookies
- 1/3 cup (67g) packed light or dark brown sugar
- 1/2 cup (8 tablespoons; 115g) unsalted butter, melted
FILLING
- 300ml (1 ¼ cup) heavy cream or heavy whipping cream
- 680g (three 8-ounce blocks) full-fat cream cheese, softened to room temperature
- 100g (1/2 cup) granulated sugar
- 2 tablespoons (15g) confectioners’ sugar
- 60 g (1/4 cup) sour cream, at room temperature
- 2 teaspoons lemon juice
- 1 teaspoon pure vanilla extract

Directions
CRUST
- Place digestive cookies into a ziploc bag. Proceed to crush until no large pieces remain.
- Combine cracker crumbs, sugar, and melted butter in a small bowl. Make sure every crumb is coated with butter.
- Pour into a 9-inch pan. Spread into an even layer, then compress firmly with a measuring cup making sure to press up the sides of the pan. Set aside in fridge.
FILLING
- Using a hand mixer or a stand mixer, whip the cold heavy cream into stiff peaks on medium-high speed. Pour in the cream and whip until the mixture can hold stiff peaks.
- Next, mix the cream cheese and granulated sugar together until smooth and creamy. Add the confectioners’ sugar, sour cream, lemon juice, and vanilla extract. Beat for 2-3 minutes on medium-high speed until smooth and combined.
- Fold in whipped cream into cheese cake filling until smooth and pour into the prepared crust.
- Refrigerate until the filling is firm and cold, about 6 hours or overnight.
