Maze Soba Hototogisu is a One Michelin Star brand, Hototogisu ramen’s new concept brand. Supervised by One Michelin Star chef Yamamoto, we have created numerous varieties of maze soba. In Japanese, maze soba means “dry noodles” or “dry ramen” that needs to be mixed before eating. Hence, the different ingredients’ harmony will take into effect once the noodle is mixed together. Each and every maze soba items have different toppings and that will give a brand-new taste in the mouth.
