From the streets of Seoul to a corner of the Lion City, a delicious food that transcends national boundaries is passed down. In 2005, the two of us traveled to South Korea for the first time. At the end of the trip, we unexpectedly entered a street store and tasted the Korean fried chicken that we would never forget for the first time. The golden and crispy skin is wrapped in a sweet and spicy rich sauce. The moment you take a bite, the tender meat juice bursts in your mouth. At that moment, the corners of our mouths are full of sauce, and our hearts are quietly filled with a certain flavor.
“Why don't we go back and open a fried chicken shop ourselves?” That night, we couldn't sleep. We kept chatting about the crispness, juiciness, sweetness and spiciness of that piece of fried chicken, as well as its magic that could lift one's mood. As a result, our journey was prolonged, and our purpose changed from traveling to learning, learning the authentic sauce ratio and frying technique of Korean fried chicken. Through repeated experiments, the most authentic flavor is replicated.
In the same year, we opened MJL Fried Chicken. The store was not large, but only two people were busy running around, frying chicken, preparing sauce, and greeting customers. From the very first day of opening, we set a rule: fresh chicken was delivered every day and never left overnight, because only fresh chicken could lock in the most perfect taste. Fried chicken is like this, not complicated, but it requires attention. This persistence has also won the trust of countless customers.
Twenty years have passed. We have countless loyal regular customers as well as new ones who come here for our reputation. Some people say that our fried chicken is not the “most distinctive,” but once you try it, you'll get addicted. This is probably the taste we want to create – a bit of memory, a bit of warmth, and a bit of reluctance to finish it.
In 2025, we settled down in Singapore and brought MJL fried chicken here. We want to share the flavor that belongs to “the two of us” with more people. We hope that every time you taste MJL fried chicken, you can feel a little bit of seriousness, a little tenderness, and the story of us hidden in the flavor.
